I have a manual 370z. When you push the loud pedal to the floor (which I am doing far too often ), I noticed that there is some resistance and then it will go a little further - just like on an auto, where you have a kick down controlled using that last bit of travel.

Does this do anything on the manual cars or is it simply that they use the same set up on both manual and auto cars?

A fine question. I'm not sure. As you say, I think it's just the same mechanism.

I'll have to exercise my ankle a bit more when the roads are a bit less slippy!

I noticed this when I used to drive mine, but never quite understood why... until I did found out (the hard way) that it disables the speed limit function when activated, I guess for safety.

I was overtaking a vehicle and I completely forgot that I had set it earlier in my journey, so middle overtake the speed limit kicked in and killed the power, my instant reaction was the step on the pedal hard and after the little click, the speed limit was deactivated and a lovely surge of power was delivered, saving my a** in the process

Yep, spot on. Like kicking the clutch or brake will disable cruise control, the kick down disables the limit.
